TAKE A DIP....... |
For most of us, the real fun of holiday parties is the nonstop snack-a-thon. But if you want to be leass naughty this year, Robin Miller, the host of Food Networks' Quick Fix Meals, offers three dips bursting with holiday flavor --- not fat.
** GINGER: Rx - The old wives tale is true. It can settle the stomach. Smart Dip - Ginger Spiked Roasted Pepper Dip. In a food processor, combine 1 tablespoon minced fresh ginger, two 12-once jars water-packed roasted red peppers (undrained), 2 chopped garlic cloves, and 1 1/2 teaspoons Dijon mustard. Blend until smooth. Add salt and pepper, then 1/4 cup minced fresh basil. Serve with: Whole grain crackers or fresh vegetables. ^^^^^^^^^^^^^^^^
** CRANBERRIES: Rx - Rich in antioxidants, which research suggests may help protect against disease and cancer. Smart Dip - Mango-Cranberry Chutney. IN a medium saucepan, combine 2 cups diced mangoes, 1/2 cup sweetened dried cranberries, 1/4 cup minced red onion, 2 tablesspoons water, 2 tablespoons cider vinegar, 1 tablespoon brown sugar, 1 tablespoon ground cinnamon, and 1/2 teaspoon cummin. Simmer for 10 minures, stirring, until thick. Serve warm. Serve with - Pita wedges or black bread sqaures. ^^^^^^^^^^^^^^
** CINNAMON: Rx - Helps lower cholesterol and, in diabetics, reduce blood sugar levels. Smart Dip - Creamy Cinnamon Applesauce . In a medium bpwl, mix 1 1/2 cups applesauce, 1/2 cup low-fat vanilla yogurt, 1 teaspoon ground nutmeg. Serve with - Sliced angel food cake or dried fruit like papaya, mango or pineapple.
